Tasty and Simple Meals!

Anyone who knows me knows I love to eat. I am not a dieter. I slim down when needed but luckily my boyfriend likes to eat too...so neither of us get too concerned if we are not super svelte at all times. We are healthy and balanced but will not turn down a delicious helping of toasted jalapeno cheese bread loaf from Trader Joes if offered!  I understand wanting to be thin and attractive to others....but come on. Counting calories, food journals with caloric intakes, never eating carbs, controlling our bodies with such precision that we can't enjoy a good  meal with friends every now and then....that is sad. I am not saying pork up and get the diabetes...I am saying to all the ladies and gentlemen out there....enjoy yourself more. I am going to start posting pictures of delicious meals Peter and I enjoy and hopefully some of you self loathing carb hating calorie counting twigs will follow suit.

*Disclaimer: If you are overweight or obese I understand the struggle and I am not talking to you. My anger goes out to the sizes 8's &under who wine about carbs and calories. Shut up already. No one cares! Health comes in many forms! Going crazy over gaining and losing an inch is a whole different set of health problems!

That being said, here is a yummy dinner. We made salad bowls out of Parmesan cheese and filled them with salad! Yummy! We had steamed chili lime tilapia and mixed veggies(broccoli & water chestnuts) with it.

recipe:

Parmesan bowls....very easy!

Use cheap shredded parm in bag....not too fancy.

Spread in pan on stove top. Do not make too thick or too thin. As it melts it will make a lacy design around edges. It is better crispier.

When melted turn a glass over and place melted cheese sheet over glass and form it to your liking.

Voila a beautiful presentation!

Babyback ribs....precooked from Trader Joes...super easy

Chipotle fries from Trader Joes...spicy (cook fries longer for better consistency)

And I believe it was lime corn with a dash of cayenne pepper.

Very good!
